  • 1 nine-inch pie crust
  • 900 g tomatoes (cored, seeded, chopped)
  • 1 large yellow onion (thinly sliced)
  • 2 tablespoons extra-virgin olive oil
  • 1.25 teaspoons salt
  • 0.25 teaspoon black pepper
  • 0.75 teaspoon sugar
  • 1.5 teaspoons fresh thyme leaves (or ½ teaspoon dried thyme)
  • 2 tablespoons chopped fresh basil
  • 0.5 cup mayonnaise
  • 1 cup shredded fontina cheese (divided)
  • 0.33 cup grated Pecorino Romano cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine chopped tomatoes, sliced onion, olive oil, salt, pepper, sugar, and thyme; mix gently.
  3. Stir in chopped basil.
  4. Spread the tomato mixture evenly in the unbaked pie crust.
  5. In another bowl, mix mayonnaise with half of the shredded fontina until combined.
  6. Dollop this mixture over the tomatoes.
  7. Sprinkle remaining fontina and Pecorino Romano on top.
  8. Bake for 40-50 minutes until golden brown and bubbly.
  9. Allow to cool for about 10-15 minutes before slicing.
