  • 1 cup half & half (or milk)
  • 1 tablespoon minced canned chipotle peppers in adobo sauce
  • 1 tablespoon adobo sauce
  • 1.5 teaspoons salt
  • 1 cup grated cheddar cheese

Instructions

  1. Peel and chop the sweet potatoes into 1-inch pieces, then place them in a large pot covered with cold water.
  2. Bring the water to a boil over high heat, then reduce to medium and simmer until fork-tender (about 20-25 minutes).
  3. Drain the sweet potatoes thoroughly using a colander.
  4. Return the drained sweet potatoes to the pot and add butter, half & half, minced chipotle peppers, adobo sauce, and salt.
