  • 12 ounces fettuccine or penne pasta
  • 1 medium-sized butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup vegetable broth
  • 68 fresh sage leaves, chopped
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, toss cubed butternut squash with olive oil, salt, and pepper. Roast for about 25–30 minutes until tender and caramelized.
  3. In a large pot, boil salted water and cook the pasta according to package instructions until al dente. Drain and set aside.
  4. In a skillet, sauté diced onion in olive oil over medium heat until translucent (about 5 minutes). Add minced garlic for an additional minute.
  5. In a blender or food processor, combine roasted squash, sautéed onion mixture, vegetable broth, and sage leaves; blend until smooth. Season with salt and pepper.
  6. Combine the cooked pasta with the sauce in the pot; stir well to coat evenly.
