  • 90g water
  • 4 1/2 tbsp unsalted butter
  • 100g heavy cream
  • 1 tsp vanilla extract
  • 60g all-purpose flour
  • 95g quick oats
  • 165g all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 110g unsalted butter
  • 210g dark brown sugar
  • 1 large egg + 1 egg yolk
  • 2 tsp vanilla extract
  • 85g semisweet chocolate chips
  • 130g dark chocolate chips
  • 95g walnuts or pecans, finely chopped

Instructions

  1. Start by preparing the caramel: In a saucepan, combine sugar and water over medium heat. Stir until dissolved and let it bubble until amber-colored. Remove from heat and whisk in sliced butter, cream, vanilla extract, and salt.
  2. Preheat your oven to 175°C (350°F). Grease an 8×8 inch baking dish lined with parchment paper.
  3. For the cookie base: In a bowl, whisk together flours, oats, baking powder, and salt. In another bowl, cream butter and brown sugar until smooth. Add eggs and vanilla; mix well before folding in dry ingredients.
  4. Spread two-thirds of the cookie dough into the prepared dish. Bake for about 8 minutes.
  5. After cooling slightly, layer dark chocolate chips on top, followed by caramel sauce. Distribute remaining cookie dough on top.
  6. Bake for an additional 20-25 minutes until golden brown.
  7. Cool completely before slicing into bars.
