  • 2 boxes pumpkin spice cake mix (plus eggs, oil, and water as required)
  • 1 cup cream cheese frosting
  • 4 cups orange candy melts
  • Green fondant or green licorice (for stems)
  • ½ cup melted dark chocolate (for decorating)
  • 1 tsp cinnamon or nutmeg
  • Crushed gingersnap crumbs (for garnish)
  • Edible glitter (optional)

Instructions

  1. Preheat your oven according to the cake mix instructions. Prepare both boxes of pumpkin spice cake mix as directed and bake. Allow cakes to cool completely.
  2. Crumble the cooled cakes into a large mixing bowl and add cream cheese frosting. Mix until well combined.
  3. Roll the mixture into 24 evenly-sized balls and chill in the refrigerator for about 30 minutes.
  4. Melt orange candy melts in a microwave-safe bowl until smooth. Dip each chilled ball until fully coated, then shape into pumpkins before the coating sets.
