Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl. Press into a baking pan to form the crust and bake for 10 minutes.
  3. Beat softened cream cheese until smooth; add sugar and vanilla extract. Mix in eggs one at a time followed by sour cream.
  4. Prepare the apple layer by mixing diced apples with brown sugar, cinnamon, cornstarch, water, and lemon juice.
  5. Pour cheesecake filling over the crust, then layer apples on top.
  6. For the crumble topping, mix flour, brown sugar, and cinnamon; cut in cold butter until crumbly. Sprinkle over apples.
  7. Bake for about 55 minutes until edges are set but center is slightly jiggly. Cool completely before chilling for at least four hours or overnight.
