  • 0.5 cup water (approximately, for batter)
  • 1 large eggplant (sliced into 1/4-inch rounds)
  • 1 capsicum (bell pepper), any color, finely chopped
  • 0.25 cup tomato salsa (your favorite)
  • 0.5 cup mozzarella cheese (shredded)
  • 6 tbsp oil (for frying; neutral oil like vegetable or canola)

Instructions

  1. In a mixing bowl, whisk together chickpea flour, rice flour, salt, red chili flakes, and mixed herbs. Gradually add water until you achieve a smooth batter.
  2. Slice the eggplant and spread salsa on one side of each slice, topping it with cheese and chopped bell pepper.
  3. Heat oil in a skillet over medium heat until sizzling.
  4. Dip each eggplant slice in the batter and fry them in batches until golden brown and crispy.
  5. Drain on paper towels before serving hot.
