  • 3 lbs boneless, skinless chicken thighs
  • 1 medium onion, diced
  • 1 large carrot, diced
  • 1 bell pepper, sliced
  • 1 scotch bonnet pepper or 1/2 teaspoon chili flakes
  • 2 potatoes, diced
  • 2 cups chicken stock
  • 1 cup coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon smoked paprika
  • 2 teaspoons garlic powder
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken with curry powder, smoked paprika, garlic powder, salt, and pepper for at least 30 minutes.
  2. Heat olive oil in a skillet over medium heat and sauté diced onions, bell peppers, and carrots until softened.
  3. Add marinated chicken and brown for about 5 minutes. Stir in diced potatoes and scotch bonnet or chili flakes.
