  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1/2 tsp chili powder (optional)
  • Coconut milk (enough to cover beef)

Instructions

  1. Prepare all ingredients by chopping the onion, mincing the garlic, and grating the ginger.
  2. In a large pot over medium heat, add vegetable oil and sauté the onion until translucent (about 5 minutes). Add minced garlic and grated ginger; cook for another minute until fragrant.
  3. Increase heat to medium-high and brown the beef cubes on all sides (about 5-7 minutes).
  4. Stir in red curry paste, ground turmeric, ground cinnamon, ground cumin, and chili powder if using. Cook for about 2 minutes.
  5. Pour in enough coconut milk to cover the beef completely; bring to a gentle simmer. Reduce heat to low and cover. Cook for about 1.5-2 hours until beef is fork-tender.
  6. Adjust seasoning before serving hot over rice or your choice of grain.
