  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat a non-stick skillet or griddle over medium heat.
  2. In a shallow bowl, mix together sugar and cinnamon until well combined.
  3. In another bowl, whisk eggs and milk until fully incorporated.
  4. Dip each slice of brioche into the egg mixture and coat thoroughly. Place a spoonful of cinnamon sugar in the center of 4 slices and top with another slice to form sandwiches.
  5. Brush the preheated skillet with melted butter and place the stuffed sandwiches inside. Cook for about 3-4 minutes on each side until golden brown and crispy.
  6. Roll each sandwich in the remaining cinnamon sugar mixture while still warm.
