  • 2 cups cooked, diced boneless skinless chicken breast
  • ½ cup buffalo sauce
  • 1 cup sharp cheddar cheese, shredded
  • 4 oz cream cheese
  • 2 tbsp butter
  • ¼ cup all-purpose flour
  • 2 cups milk
  • 1 cup panko breadcrumbs
  • 2 green onions, sliced

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente; drain and set aside.
  2. In a skillet over medium heat, sauté seasoned diced chicken until golden brown (about 5-7 minutes).
  3. In a saucepan, melt butter and create a roux with flour. Gradually whisk in milk until smooth; add cream cheese and cheddar cheese along with buffalo sauce until creamy.
  4. Combine cooked pasta with the cheese sauce and sautéed chicken in a large bowl.
  5. Transfer the mixture to a greased baking dish and top with panko breadcrumbs.
  6. Bake at 350°F (175°C) for about 20-25 minutes or until bubbly and golden brown.
