  • 34 lbs organic chicken (skin removed)
  • 23 tablespoons Jamaican Green Seasoning
  • 2 tablespoons Jamaican curry powder
  • 1 can (14 oz) full-fat coconut milk
  • 2 medium russet potatoes (peeled and cubed)
  • 2 medium carrots (peeled and chopped)
  • 1 medium bell pepper (chopped)
  • 3 garlic cloves (minced)
  • 13 scotch bonnet peppers (adjust for spice preference)
  • 1 cup low-sodium chicken stock
  • 2 teaspoons minced fresh ginger
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons organic brown sugar
  • 2 sprigs fresh thyme
  • 2 green onions (lightly crushed or chopped)
  • 2 teaspoons On Everything All-Purpose Blend
  • 1 teaspoon sea salt
  • 1/2 teaspoon smoked paprika
  • 2 1/2 tablespoons Jamaican curry powder
  • 1 tablespoon Jamaican pepper sauce
  • 1 teaspoon ground allspice
  • Sea salt and black pepper to taste

Instructions

  1. Marinate chicken pieces with Jamaican Green Seasoning, Jamaican curry powder, sea salt, and smoked paprika for at least one hour.
  2. In a large pot, heat olive oil over medium heat. Sauté garlic, ginger, bell pepper, green onions, and thyme until fragrant.
  3. Add marinated chicken and brown on all sides for about five minutes.
  4. Stir in potatoes, carrots, scotch bonnet peppers, coconut milk, chicken stock, additional curry powder, and seasonings. Mix well.
  5. Bring to a gentle boil; reduce heat to low and cover. Simmer for 30 minutes until the chicken is cooked through and vegetables are tender.
