  • Pizza dough for 1 (12-inch) crust
  • 2 tablespoons unsalted butter
  • 8 oz shiitake mushrooms, thinly sliced
  • 1 medium clove garlic, minced
  • 1 tablespoon all-purpose flour
  • 3/4 cup 2% or skim milk
  • 2 tablespoons heavy whipping cream
  • 3/4 cup grated asiago cheese, divided
  • 2 cups shredded low-moisture mozzarella cheese
  • 1 cup jarred quartered artichoke hearts, patted dry
  • 1 tablespoon minced fresh thyme

Instructions

  1. Preheat your oven to 450°F and adjust the rack to the middle position.
  2. Shape the pizza dough into a 12-inch circle on a floured surface.
  3. In a skillet, melt 1 tablespoon of butter over medium-high heat and sauté the shiitake mushrooms until tender; season with salt and pepper.
  4. For the alfredo sauce, melt the remaining butter in a small saucepan, add garlic and flour, then whisk in milk and cream until smooth. Simmer until thickened and stir in asiago cheese.
  5. Spread the sauce over the crust, leaving an edge for the crust, then layer on mozzarella cheese and artichokes.
  6. Bake for about 10 minutes; after that time, add sautéed mushrooms, thyme, and remaining asiago cheese before baking for another 5-10 minutes until golden brown.
  7. Allow cooling briefly before slicing into wedges to serve warm.
