  • 3 cups all-purpose flour
  • 1/4 cup castor sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 and 1/4 cups buttermilk
  • 3 red apples (thinly sliced)
  • 2 tbsp heavy cream (for brushing)
  • 1 cup icing sugar (for the glaze)
  • 1 tbsp maple syrup (for the glaze)
  • 1 tsp vanilla (for the glaze)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, castor sugar, baking powder, baking soda, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Gradually add buttermilk while gently mixing until just combined.
  5. Fold in the sliced apples and lemon juice.
  6. Turn dough onto a floured surface; roll out to about 1-inch thickness and cut into desired shapes.
  7. Place on the prepared baking sheet; brush tops with heavy cream and sprinkle with granulated sugar.
  8. Bake for 25–30 minutes or until golden brown.
  9. While baking, prepare the glaze by whisking together icing sugar, maple syrup, and vanilla extract.
  10. Drizzle glaze over warm scones before serving.
